Lahori Cholay Recipe

Before we proceed into the main recipe, please note down the list of ingredients we have used in this recipe.

Ingredients

  • Safaid Channay ½ kg
  • Baking Soda 2 tsp
  • Baking Soda 1 tsp
  • Oil 1 Cup
  • Pyaaz – Onions Sliced 1 piece sliced
  • Lassan Adrak Paste – Ginger Garlic Paste 2 tbsp
  • Namak – Salt 2 tsp
  • Haldi – Turmeric 1 and ½ tsp
  • Surk Mirch – Red Pepper 2 tsp
  • Safaid Zeera – Cumin 1 tsp
  • Bari Elachi Black – Cardamom 2 pieces
  • Kali Mirch – Black Pepper 10 pieces
  • Laung – Cloves 5 pieces
  • Tomato Paste – 1 piece
  • Hari Mirchain – Green Chillies 6 pieces
  • Garam Masala 1 tsp

Lahori Cholay Recipe in Urdu

Before We Start

Here are some steps you need to do before starting the cooking. Take Safaid Channay ½ kg and wash it thoroughly in a bowl. After that, fill the bowl with Safaid Channay and water. Now add Baking Soda 2 tsp, and mix it well for a while and allow the baking soda to mix in the Cholay. After some minutes, filter out the water from the bowl and separate the Channy. Now you have to add Baking Soda 1 tsp and mix it thoroughly. Now put a piece of cloth and cover the bowl and make it airtight. Leave the bowl for the next eight hours.

Eight Hours

It is time for you to start cooking. Add Oil 1 Cup, Pyaaz – Onions Sliced 1 piece sliced, and Lassan Adrak Paste – Ginger Garlic Paste 2 tbsp. Mix it well and let the sliced onion pieces go brownish. Now add Namak – Salt 2 tsp, Haldi – Turmeric 1 and ½ tsp, and Surk Mirch – Red Pepper 2 tsp.

Preparing the Curry

Furthermore, gather all these ingredients such as Safaid Zeera – Cumin 1 tsp, Bari Elachi Black – Cardamom 2 pieces, Kali Mirch – Black Pepper 10 pieces, Laung – Cloves 5 pieces in a single plate and add them up. Cholay Time

Now is the time to uncover the Channay we left for the past eight hours. Uncover the Cholay, add some water in it then filter out the Cholay into the curry we are preparing in the previous step. Add the Cholay in the curry, and mix it well. If you want more curry, as Lahori Chikkar Cholay is famous, you can add a little amount of water as well.

Almost Done

Cover it and let it cook for some minutes. Allow the water, spices, Cholay to mix within, then add Hari Mirchain – Green Chillies 6 pieces, and Garam Masala 1 tsp. Cover it and allow it to cook for further few minutes. Lahori Cholay Recipe is complete. Lahori Chikkar Cholay or Chikkar Cholay is ready to be served.
