  • Ginger Garlic Paste (Lassan Adarak Paste) – 2 tbsp
  • Red Pepper (Surk Mirch) – 1 tbsp
  • Turmeric (Haldi) – 1 tsp
  • Coriander Powder (Pesa wa Dhaniya) – 1 tsp
  • Cumin (Safaid Zeera) – 1/2 tsp
  • Black Pepper (Sabit Kali Mirch) – 7 pieces
  • Cloves (Laung) – 4 pieces
  • Black Cardamom (Bari Elachi) – 2 pieces
  • Green Cardamom (Choti Elachi) – 4 pieces
  • Bay Leaves (Taiz Patta) – 2 pieces
  • Yogurt (Dahi) – 1/3 kg
  • Garam Masala – 1 tsp
  • Fresh Coriander (Hara Dhaniya) – As per use

Machli ka Salan Recipe in Urdu

Step 1: Marinate the Fish

  1. Take 1 kg of fish and marinate it with 2 tsp salt and 2 tbsp vinegar.
  2. Mix well and leave the fish to marinate for 4 hours. This step ensures the fish absorbs the seasoning and becomes tender.

Prepare the Curry Base

  1. Heat a small cup of oil in a pan and add 1/2 kg sliced onions. Fry the onions until they become golden brown.
  2. Remove the fried onions and set them aside. Keep the oil in the pan, as it will be used for frying the fish.

Fry the Fish

  1. After the 4-hour marination, fry the fish in the same oil used for the onions.
  2. Once fried, set the fish aside.

Make the Spice Mixture

  1. Using the same oil, add:
    • 2 tbsp ginger garlic paste (lassan adarak paste)
    • 1 tsp salt (namak)
    • 1 tbsp red pepper (surk mirch)
    • 1 tsp turmeric (haldi)
    • 1 tsp coriander powder (pesa wa dhaniya).
  2. Cook this spice mixture for a few minutes, stirring to combine.

Blend the Yogurt and Onions

    • 1/3 kg yogurt (dahi)
    • The fried onions from earlier.
  2. Blend until smooth and add the mixture back into the pan with the cooked spices.

Add the Fish and Spices

  1. Now, add the fried fish to the curry.
  2. For extra flavor, add:
    • 1/2 tsp cumin (safaid zeera)
    • 7 black peppercorns (sabit kali mirch)
    • 4 cloves (laung)
    • 2 black cardamoms (bari elachi)
    • 4 green cardamoms (choti elachi)
    • 2 bay leaves (taiz patta).
