Chicken Pulao Recipe in Urdu & English

Chicken Pulao Recipe

Before we get into the Chicken Pulao Recipe in Urdu part, please read and note down all the ingredients you may require in order for this recipe. Here are two sets of ingredients.

Ingredients Chicken Stock

  • Chicken – 3/4 kg
  • Oil – 1 tbsp
  • Namak/Salt – 1 tsp
  • Pyaaz/Onion – 1 piece
  • Lehsan/Garlic – 1 piece
  • Safeed Zeera/Cumin – 2 tsp
  • Sabut Dhaniya/Coriander – 2 tsp
  • Saunf/Fennel – 2 tsp
  • Bari Elachi/Black/Cardamom 2 pieces

Ingredients Pulao

  • Rice 3/4 Kg
  • Oil – 1 cup
  • Pyaaz/Onion – sliced 1 piece
  • Hari Mirch/Green chilies – 4 pieces
  • Taiz paat/Bay leaves – 3 pieces
  • Kali Mirch/Black pepper – ½ tsp
  • Laung/Cloves – 6-7 pieces
  • Zeera/Cumin – 1 tsp
  • Lehsan Adrak Paste/Ginger garlic paste – 2 tbsp
  • Hari Mirch/Green chilies – 4 pieces grinded with water to create a paste
  • Dahi/Yogurt – 1/4kg
  • Daar Cheeni/Cinamon 3 pieces
  • Chicken Broth 4 cup
  • Zard Rang/Yellow color – 1 pinch

Chicken Pulao Recipe in Urdu

Prepare Chicken Stock

Take a big cooking pot. Add 1 tbsp oil into it. Then add 1 tsp Namak/Salt, 3/4 kg chicken into it. Fry until it turns light golden brown. Now you need to add 6 cups of water. Further, add one piece of Pyaaz/Onion non-sliced, and a single piece of Lehsan/Garlic non-sliced to make a paste. It is then time to add 2 tsp Safeed Zeera/Cumin, and 2 tsp Sabut Dhaniya/Coriander. Finally, add 2 tsp Saunf/Fennel to mix and fry. Add another 1 tsp Namak/Salt more now. Boil it and allow the chicken to be cooked at a medium/low flame.

Making of Pulao

The second step of Chicken Pulao Recipe in Urdu or English is to prepare the Pulao. Start with 1 cup Oil in a pot where you want to make pulao. Add 1 piece of sliced Pyaaz/Onion. Fry till it turns whitish brown in color. The color of the fried onion would be the color of the pulao/rice. Now you can add 4 pieces of Hari Mirch/Green chilies, and 3 pieces of Taiz Paat/Bay Leaves. Further, add ½ tsp non crushed Kali Mirch/Black pepper. Followed by 6 or 7 pieces of  Laung/Cloves, and 1 tsp Zeera/Cumin.

Green Chilli Paste

Mix it all together and let it blend well. Now add 2 tbsp Lehsan Adrak paste/Ginger garlic paste. Fry for a minute and then add water to it. Make a paste of 4 pieces of Hari Mirch/Green chilies through a grinder using water. Add this green chili paste into the prepared material above.

Yogurt, Cinamon, and Rice

Mix it well and then add boiled chicken. Fry and then add 1/4 kg Dahi/Yogurt. Let it mix and fry for 4-5 minutes until oil releases from the mixture. Now is the time to add 3 pieces of Daar Cheeni/Cinamon and 4 cups of cooked chicken broth. Mix it all together then add 3/4 kg Rice(already soaked in water for half an hour). Boil it and cook it on low flame. Add 1 pinch of Zard color/yellow color mixed with milk to form a paste. Add this paste and sprinkle it equally on the pot. Allow it to cook for 5 minutes furthermore.
