For Boiling Rice:

  • Rice – 1 kg
  • Cinnamon Sticks – 2 pieces
  • Green Cardamom – 5 pieces
  • Vinegar – 2 tbsp
  • Salt – 3 tsp

Biryani Masala:

  • Oil – ¼ kg
  • Onions – 2, sliced
  • Bay Leaves (Teez Patta) – 3 pieces
  • Star Anise (Badyaan) – 2 pieces
  • Cloves (Laung) – 4 pieces
  • Black Peppercorns – 7 pieces
  • Ginger Garlic Paste – 4 tsp
  • Red Chili Powder – 2 tsp
  • Coriander Powder – 2 tsp
  • Biryani Masala – 4 tbsp
  • Tomatoes – ¾ kg, chopped
  • Yogurt – ¼ kg
  • Salt – 1 tsp

Marinate the Chicken

Start by marinating the chicken (1 kg). In a large bowl, add:

  • Salt (1 tsp)
  • Red Chili Powder (1 tsp)
  • Tikka Masala (1 tsp)
  • Turmeric (½ tsp)
  • Additional Salt (½ tsp)
  • Lemon Juice (from 2 lemons)
  • Yellow Food Color (2 pinches)
  • Yogurt (1 cup)

Mix everything well and let the chicken sit for about 30 minutes. After marinating, cook the chicken on medium-low flame until it’s tender and infused with tikka flavor. Once cooked, give it a smoky flavor by heating a piece of coal and placing it on a small piece of bread inside the pot. Drizzle some oil over the coal and cover the pot to trap the smoke.

Boil the Rice

In a large pot, bring water to a boil and add:

  • Rice (1 kg)
  • Cinnamon Sticks (2 pieces)
  • Green Cardamom (5 pieces)

Boil the rice until it is ¾ cooked. Drain the water and set the rice aside.

  • Star Anise (2 pieces)
  • Cloves (4 pieces)
  • Black Peppercorns (7 pieces)

Next, add 4 tsp of ginger garlic paste and sauté for a few minutes. Then, add:

  • Red Chili Powder (2 tsp)
  • Coriander Powder (2 tsp)
  • Biryani Masala (4 tbsp)
  • Chopped Tomatoes (¾ kg)

Cook until the tomatoes break down and release their oil. Now, add ¼ kg yogurt and 1 tsp of salt, mixing everything well. Let the mixture cook until the oil separates from the masala.
