  • Coriander Seeds (Sabit Dhaniya) – 1½ tsp
  • Oil – To taste (approx. 1 cup)
  • Onions (Pyaaz) – 2 (medium-sized, sliced)
  • Ginger Garlic Paste (Lehsan Adrak) – 2 tbsp
  • Red Chili Powder (Laal Mirch) – 1 tsp
  • Turmeric Powder (Haldi) – ½ tsp
  • Tomatoes – 2 (chopped)
  • Salt (Namak) – 1 tsp
  • Chicken – 1 kg (cut into pieces)
  • Yogurt (Dahi) – ¼ kg
  • Green Chilies (Hari Mirch) – 5
  • Fenugreek (Kasoori Methi) – ½ tsp
  • Cream – ½ cup

How to Make Chicken Handi – Step by Step

Step One: Prepare the Masala

  1. Dry roast 1½ tsp of cumin seeds and coriander seeds in a pan on low heat for about a minute until fragrant. Set aside.
  2. In a handi or deep cooking pot, heat oil (about 1 cup or to taste).
  3. Add sliced onions and fry until golden brown.
  4. Stir in the ginger garlic paste (2 tbsp) and cook for a minute.
  5. Add the roasted cumin and coriander mixture to the handi and mix well.
  6. Now add red chili powder (1 tsp) and turmeric powder (½ tsp).
  7. Toss in the chopped tomatoes (2) and cook until the oil separates from the masala.
  8. Finally, add salt (1 tsp) to taste.
