Preparation Before Cooking

Soaking the Chickpeas:

  1. Rinse ½ kg Safaid Channay (white chickpeas) thoroughly in a bowl.
  2. Fill the bowl with water and add 2 tsp baking soda. Stir well and let the chickpeas soak for a few minutes.
  3. Drain the water, and add an additional 1 tsp baking soda to the chickpeas.
  4. Cover the bowl with a cloth, making sure it’s airtight, and let it sit for 8 hours.
